I ran the Aprilia version of the same stat. The operating temperature is quite cold 78 degrees C and I think They were designed to be used in the bottom hose off the rad on the bikes for that reason.

Worked well enough with the bypass plumbed in, but it was too cold for my liking.

I'm sure I have some data on the different temperatures that are available and from where to source them.
