Umm std dish was about 12cc I think, head is 21cc gasket 2.8cc, std compression was 9.3:1

I don't think the standard dish is 12cc, 9.8 if I remember correctly. "If its not broke, whack a turbo on it"

looks like they are 12cc, but the deck height is next to nowt.

Are we talking turbo or NA MG Metro ? Turbo was 9.4-1 compression, the NA was 10.5-1 originally, though I'm sure this was reduced for the later models.
