Have any of you guys got some pictures of your cooling setups? Can you show me where you put the rad, intercooler (and if you have one) an oil cooler? As well as how you plumbed it in and where your pipes go.

All the info is on this site. But the onus is on you to look for it. More to the point don't try and build the car in your head. Make a start by getting an engine or whatever, and then things will fall into place.

most commonly used intercoolers are the cosworth 2wd intercooler and escort rs, a few people use the land rover td5 intercooler in the front grill area, or a custom made intercooler such as forge, allard, although these are pricey.
