Sinking valves at all is a bad way to go full stop as you making the port much 'flatter' and reducing your short turn radius on the inside of the valve throat.

In terms of sinking them to avoid a pocket im not sure you could physically sink them enough as the more you sink the more needs to come off the head face for compression ratio too..

It's a non starter.

Agree with above , the pockets are around 6mm in the block so you would have to go very deep into the head and also have to shorten the valve stems to the point where you would be very close to the rocker hitting the valve cap instead of the stem itself.
