Should I fit a cooler? Would I need to take off/bypass in winter?

As you need to do long journeys, I'd fit a cooler, but also fit an oil thermostat too. Even if you don't mind the faff of monitoring the temps and blocking the fins in the winter, the thermostat will also let the oil temp rises to working temperature quicker.

Now I'm going through a litre every 1000 mile or so (possibly a little more). Should I be worried?

Sounds like a lot, but if it isn't leaving a trail of smoke and still passes it's MOT emissions test, then personally, I wouldn't be too concerned, just keep an eye on it.
